Crystals grow when a dissolved substance comes out of solution and its particles settle into a repeating, orderly pattern. Warm water dissolves more solid than cold, so a solution made hot and then cooled holds more than it can keep, and the excess crystallises out. Slow cooling produces fewer, larger crystals because particles have time to join an existing structure; rapid cooling produces many small ones. The flat faces and sharp angles you see are the outward sign of that regular internal arrangement.
